A questionnaire was created and contrasted with all the partners in the project, and it was sent to all of the identified dairies. The questionnaire includes issues regarding production volumes, types of cheese produced, amount of whey generated, available equipment and infrastructure, etc.

 

The purpose is to obtain first-hand information on the current situation of cheese-making dairies, the amount of whey produced and their technological level. This way, valorisation solutions adapted to each type of cheese-making dairy may be proposed.
