A visit was also made this month to the sheep farm of the BURUAGA cheese factory at Etxabarri-Ibiña. The main livestock farm has some 800 Assaf sheep and is owned by Javier Aizpeolea. In conjunction with other latxa sheep farms in the area, milk is provided to the cheese factory for the manufacture of Idiazabal, a hard, mature cheese and block cheese, with blue cheese production currently being initiated.

This farm has been feeding its animals with the milk whey from the cheese factory for 15 years. Whey is collected in a tank and then transported to the farm where it is loaded directly into drinking troughs from which the sheep can drink freely.
